Foods of the region – kawara-soba (2026-02-13)

Kawara-soba is known as a local specialty of Yamaguchi Prefecture with a focus on the Kawatana-onsen hot springs where kawara-soba was firstly offered.

Although the access shows the way to Kawatana-onsen, kawara-soba is offered in the other restaurants in the other places of Yamaguch Prefecture now.

 

For preparing kawara-soba, flavorful chasoba (soba noodle with green tea) are arranged on a hot roof tile with finely sliced beef, kinshi-tamago (omelet cut into thin stripes), nori (seaweed), chopped green onion, and grated daikon (Japanese radish) with chili. Dip them in mentsuyu (special bonito flavor sauce) to eat.
